Coconut cookies: presentation
The coconut cookies that I bring to you today are one of the simplest recipes you’ll find on the blog. The dough is prepared in a moment and then only remains to stretch, cut and baked. These are very crispy cookies, which last several days, in case they have not been eaten before. The taste is of the most delicate, its texture is very pleasant at mealtime and, if you are a total fan of coconut like me, finding the coconut crumbs when you eat them is really wonderful.
Have them amano if you are going to have a coffee because they are very capricious.
It is a recipe by J. Rondissoni from his book Sweets. I made it try and it was a discovery. I hope you like it.
For 40 cookies
- 225 g of wheat flour
- 200 g of sugar
- 175 g grated coconut
- 100 g of butter at room temperature
- 50 g of ground hazelnuts
- 3 eggs size L
- 1 spoon of vanilla
- 5 g of baking powder or baking powder
Coconut cookies: preparation of the recipe
1.- In a large bowl place all the ingredients except for one of the eggs that will serve later to paint the cookies. Mix well with your hands until you achieve a dense mass. Form a ball and store it in a covered container for at least one hour in the refrigerator.
2.- Take a portion of dough and spread it with a rolling pin on the floured table. Leaves a thickness of approximately 5 mm.
3.- Cut the discs with a cookie cutter and leave them on top of the oven tray on vegetable paper. With these quantities, two trays come out.
4.- Beat the egg that you had reserved and added a little water. Beat again and paint each cookie with the beaten egg to give it a shiny finish and a nice golden color.
5.- Bake 10 to 15 minutes in the oven preheated to 200º C (392º F) with superior and inferior heat. Once browned, remove them from the oven and let them cool on a rack.

My advice for decorating coconut cookies
If you like cookies with a rustic finish, sprinkle some grated coconut. You can also put some white sugar. Another way to decorate them is to give them a chocolate bath and sprinkle them with grated coconut. And if you are a fan of nuts, some nuts, hazelnuts or almonds will give a delicious touch.
