If you like Chinese food, these spring rolls will amaze you. I show you two ways to prepare them: one, making the own dough that wraps them and another, using filo pasta that you can buy in any supermarket. In both ways, you are delicious and are a perfect choice as a starter or for dinner. You can accompany them with a fried rice and to mark a Chinese-style dinner that will leave your family open-mouthed. They have a beautiful cut thanks to the colors and variety of vegetables. You already know that children find it hard to eat fewer vegetables if you hide them, so this may be a perfect option. They can be cooked in the pan or in the oven, you choose the option that you like the most. If you want them to be a little lighter, I recommend you cook them in the oven. Since the filling is already cooked, you only have to brown the dough. Be very careful that they are well browned, without burning, on both sides and enjoy some delicious spring rolls.   • 250 ml of water (1 cup)
  • 125 g flour (1 cup)
  • A pinch of salt
  • Cornstarch
  • For the rolls
  • Flour sheets or 5 sheets of edible dough
  • 200 g minced pork
  • 2 carrots
  • 1 tender onion
  • 200 g of Chinese cabbage or another type of cabbage
  • 100 g of bean sprouts
  • 2 cloves of garlic
  • 1 egg
  • Salt and a spoonful of soy sauce
  • Frying oil

Preparation of the homemade phyllo dough of the spring rolls:
1.- Place the water, flour and a pinch of salt in the blender jar. Mix well with the blender. You will have a pretty liquid mixture.

2.- Cook the dough. Put a non-stick pan on the fire and, as soon as it is hot, remove it from the fire. Paint the base with a kitchen brush, covering the bottom of the whole pan making sure there is no space without mass. Once covered the pan with a very thin layer of dough, return the pan or crepe to moderate heat. Wait until it cooks completely and you will see how it is taking off. If you see a hole without mass, paint again to cover it. When the dough is peeled off, turn it over so it is done on the other side. Remove to a plate. Wipe off any remaining dough with a paper towel and repeat the process until the dough is finished.

3.- Keep the sheets of dough if you are not going to make the rolls at the moment. Put a bit of cornstarch between layer and layer so they do not get stuck with each other. Put the leaves on top of a piece of vegetable paper and roll it up. Put it in a bag and you have ready to store in the refrigerator and even freeze. Another way to avoid sticking is to paint them with oil on both sides. This way you will have them ready to use them at any time.
Preparation of the filling of the spring rolls:
4.- Finely chop garlic and onion. Cut the julienne leaves of Chinese cabbage and grate the carrots with a thick grater.

5.- Cook the filling. Place a good squirt of olive oil in a pan over the heat and add the garlic with the care that it does not burn, add the meat well undone and season with a little salt. When you see that the meat begins to change color, add the onion and carrot. Remove and sauté over high heat. Add the cabbage after three minutes and use salt and spices to taste. Add also the bean sprouts and a splash of soy sauce. Reserve the filling in a tray.

6.- Mount the rolls. Place a portion of stuffing on one end of the dough sheet and roll it over, fold when you get to half and paint well with egg to close. (Look at the video as I do).

7.- Another way to make the rolls. If you do not want to prepare the dough, you can use dough that you will find in most supermarkets. Cut the dough in half. Place the filling and see the shape of the roll and fold the edges sealing it with a little egg. (Look at the video how I do it).

8.- Fry the rolls or prepare them in the oven. Place the rolls in the pan when the oil is very hot, brown them well on both sides and remove them to a plate with absorbent paper to remove the excess oil.

9.- If you are going to prepare them in the oven, paint them with beaten egg and place them in the oven tray at about 200 degrees until they are golden brown.

To serve, accompany with sweet and sour Chinese sauce.

My advice for preparing these spring rolls with the homemade dough:

If when you assemble the rolls you realize that one of the leaves has a hole, do not worry. This is solved by adding a little bit of dough as a patch and rolling in the same way.
